Just to confirm, if I have a character who’s occupation is Yeoman, and Spear is listed in the default skill section as x3 SB, and under Yeoman as x5 SB, I take just the x5 SB?

Yes. Also note that it is the Basic Spear skill that is learned to SB5, the other weapons skill it is Specialties.

Hmm, I wonder what was the thought about that.

Yes, I spotted that too; Shortsword x4, a specialty of Sword.
